Let's start by qualifying the word "need".  Of course we don't "need" any of them.  The right restaurants and nightlife do give a city a certain sparkle and profile.  So, for you trolls out there, I'm just using the word "need" because it's a tiny bit broader than "want".

First off, there were a few places that we thought we "needed" but aren't doing business here anymore. Bikinis, Grandy's, Carl's Junior, Jack In The Box, and Taco Bueno just couldn't make the cut in Lubbock for one reason or another. I'm also seeing a couple of new and old places that look to be on very shaky ground.

So, I've seen a few names thrown out there before "In N' Out Burger", Pappadeaux's,  Macaroni Grill, to name a few.  Personally, I'd just like to see something in north Lubbock.  Somebody has to take advantage of all this traffic at the new Lubbock business park, not to mention hungry people coming in from the airport who want something fast.

So what restaurants do you think could actually "make it" in the hub?  Of the ones I mentioned above, there's one out of those three that I don't believe could survive (and I'm not saying which one).
