A fast food chain that specializes in steak burgers, milkshakes, and shoestring fries has committed to seriously upping its game in the taste department, according to WFLA News. 

And depending on how you feel about seed oils- the health food department, too.

Steak N' Shake announced plans this month that it will switch to 100% beef tallow for frying its french fries. There will not be a vegetarian option for fries available.

Dan Edwards, chief operations officer of Steak N' Shake, said that to make the best, Steak N' Shake couldn't make everyone happy and that vegetarians, "should eat fries elsewhere."

Plans to implement the change across all 400+ restaurants (including the dozen-ish locations in Texas) are aggressive- the target is to fry all fries in tallow by the end of next month (February 2025).

Is Tallow Healthier Than Seed Oils For Frying?

Most restaurants use vegetable oil or canola oil for frying because of their high smoke points, according to Restaurant Technology. Vegetable oil usually is a blend of soybean, canola, corn, and/or sunflower oil. These are considered "seed oils."

Seed oils have been getting a lot of negative attention lately, however, there is no consensus that they are more harmful to your health than using tallow, lard or butter.

According to Heart.org the argument against seed oils is flawed:

The misleading charge is that seed oils are high in omega-6 fatty acids that break down into toxins when used for cooking, causing inflammation, weakening the immune system, and contributing to chronic illnesses.

And while omega-6 can cause inflammation, "the amount of inflammation it's associated with has not been shown to be harmful."

Heart.org continues that what is harmful is how processed the foods made with seed oils tend to be, not the seed oils themselves.

Steak N' Shake did not speak to the seed oil issue- they simply emphasized taste and authenticity for the change to tallow. But if you are avoiding seed oils, this may be a great option for you.
