Lubbock has it all, but apparently no chili.

The first full week of fall is here, and for me, cooler weather means one thing: chili. Few foods carry the same sense of comfort and tradition in Texas, especially when it comes to the fiery, meaty goodness of what we proudly call Texas Chili.

You’ve heard the phrase, you’ve seen the recipes, and I’m betting plenty of you can throw together a pot in no time. But that raises a simple question: where do you go in Lubbock for a bowl of chili when you don’t want to cook it yourself?

On paper, chili seems like it would be a natural menu item across the state. After all, we don’t mind ordering hamburgers, steaks, or barbecue even though many of us can cook them at home. Chili is the official “State Dish” of Texas, and it comes with its own set of rules: hearty chunks of beef instead of ground meat, plenty of spice, and—this is important—absolutely no beans.

I still remember the very first place I ever had dinner in Austin: the legendary Texas Chili Parlor. It was a temple to the dish, and I assumed chili joints would be everywhere across the state. But here’s the surprise—when I went looking for chili in Lubbock, it was like searching for a ghost. Yelp and TripAdvisor were no help at all, so I asked the folks who know Lubbock food best: the LKB Foodies. And guess what? My query came up empty.

So maybe the lesson is this: Texas Chili is still a dish best made at home. When the nights get colder, grab some beef, fire up the pot, and fill your kitchen with the smell of tradition. Because if you’re in Lubbock and craving a bowl, you just might have to make it yourself.
