According to Google: "Casual setting featuring an all-you-can-eat option for hot pots and sushi ($30 dinner) in a relaxed space, plus hibachi dishes."
Yuyo Japanese Restaurant (5130 80th St)
Yuyo is now offering an AYCE sushi lunch for $18 that also includes appetizers, soups, Chinese entrees, and salad.

Also around $30 for dinner, featuring a large selection of sushi along with steamed buns, appetizers, and more.
Volkano BBQ & Sushi (6219 Slide Rd)
Dinner prices around $30 (I'm sensing a pattern here) with AYCE sushi and Korean BBQ.

The Traditional Buffets
While not focused on AYCE sushi (or hot pot, or BBQ) you can eat sushi to your hearts content at both Hayashi Buffet and China Star, however, these rolls will not be made to order, but rather available on the buffet line.
About AYCE Sushi In Lubbock
It should be noted that most AYCE sushi places will charge a per-pound rate on wasted food, should you over-order and leave a lot on your plate. Most places will also only allow you to order 2 rolls at a time, and from a more limited menu than they may offer overall (as in, very fancy rolls might not be included).
