Very few foods are quite as comforting as a warm plate of biscuits and gravy.
Of course, the very best biscuits and gravy are homemade. My favorite on the planet are the ones my Dad makes. With lots of black pepper, of course.
But making scratch biscuits and gravy is a process- and you may not have the required time, inclination, or will to wash the dishes afterwards.
That's why we have compiled a list of great places to get biscuits and gravy that Lubbockites swear by- from quick and easy drive-thru options to diners and even fine dining.
But First- Where Did This Wonderful Food Come From?
According to Elvira's Cafe, biscuits and gravy orginated in Southern Appalachia in the late 19th century.
During the lumber industry era, biscuits with “sawmill gravy” were considered a cheap and high-calorie fuel for workers who had to lift and carry lumber all day long.
It only makes sense that this tasty and filling dish would find its way into Texas- with its own labor-intensive industries like agriculture, ranching, and oil rigging.
Is It Just A Southern Thing?
While some in the Northern U.S. may have picked up on this culinary delight over the years, yes, it is primarily a Southern "thang."
People overseas seem to find it quite perplexing, as is evident in this (extremely charming) video of British schoolboys trying the dish.
Spoiler alert: while the kids are initially turned off by these "crumpets" they are completely won over by the flavor, "it actually makes me quite happy how good these are!"
