It's hard to believe that it's been over a year since Lubbock's Hungry Howie's location closed it's doors, which you can read about here. The space has sat vacant until very recently, and is now sporting some updated signage, marking the arrival of something new to come on the West Texas food scene.

Roberto's Taco Shop, a San Diego, California-based taqueria with 77 locations, is expanding outside of California and Nevada, with its first Texas location right here in the Hub City at 7717 Milwaukee Avenue.

The quick service Mexican food chain was founded as a small tortilleria in 1964 and quickly expanded throughout Southern California, as well as around the Las Vegas area.

According to their website, Roberto's is all about quality food and quality people:

We take pride in our people just as we do our food. We are happy to serve you the highest quality food made with freshest ingredients possible, with a smile on our faces.

A quick glance inside shows that while outside signage is up, there's still some work to be done before Roberto's serves its first Carne Asada Burrito, which has gained acclaim from none other than Guy Fieri on Food Network's Guilty Pleasures.

It looks like the interior of the store has been gutted, and not much else was done. We would guess that the restaurant most likely won't be ready to open the doors until sometime later this spring.
