To the delight of fans, El Pollo Loco (7102 Quaker Ave, formerly Wienerschnitzel) is getting ever closer to opening here in Lubbock, as evidenced by the new sign and paint job.

El Pollo Loco: Not Just Another Chicken Place

Lubbock has a galaxy of chicken restaurants, so why do we need another? Because El Pollo Loca isn't another tendie place (I do not mean to besmirch tendies, I love them too). El Pollo Loco's primary focus is on fire-grilled chicken, making it a healthier option than battered and fried.

Additionally, El Pollo Loco has Mexican cuisine sides like beans, rice, corn, and tortillas- although you can also get mashed potatoes, mac n cheese, and coleslaw if you prefer. El Pollo Loco also offers family meals, making for a quick and easy, healthier alternative for families, or if you want to meal prep with 8- 16 pieces of chicken.

Speaking of meal prep, their chicken bowls have jaw-dropping protein counts at 41 to 78 grams of protein per entree.

So, When Is El Pollo Loco Opening?

The answer is still "Spring 2026" as far as we know, and it IS Spring 2026, so likely very soon. Remodels almost always have some hiccups (you know if you've ever done one), and the permitting processes/ inspections can take time, too.

My best guess would be sometime "before you know it." Sorry, that isn't exactly helpful if you are already craving it. In the meantime, you can check out the menu online, or make (quite the) drive to another Texas location (yup we will be the only one for many miles once open).
