Owners You Know

El Pollo Loco is owned by Katie Hughes Mallory and Lowry Hughes, who own five Wienerschnitzels in  Lubbock. Their family has served the Lubbock area for nearly 20 years! They are bringing their quick-service expertise to a concept that I have felt Lubbock needed for years. If you've followed my articles, you know I've been crying for an El Pollo Loco since 2022!

What The Hype? Isn't This Just More Chicken?

NOPE, this is not just more chicken. While I love a good tendie as much as the next guy, El Pollo Loco is bringing something different to Lubbock: fire-roasted chicken available through a drive-thru. Or you can dine in, of course.

For people who can't or don't want to eat breaded and fried chicken, this represents an amazing new option. Fire-roasted chicken is a much leaner option and a better choice for most health-conscious diets.  Also, El Pollo Loco has awesome sides from traditional things like corn and coleslaw, to Mexican-style favorites like pinto beans and Spanish rice. You can cater your meal to your tastes and needs. Of course macoaroni and cheese is still there for you at El Pollo Loco, if you need its gooey awesomeness.
