Fajitas Pete's just opened in Lubbock, Texas. I've been snooping around online and the menu looks incredible, but, I think the bag of frozen margaritas to-go is really what's calling my name. The franchise celebrated its grand opening in the hub city a little over a week ago, and so far, customers seem pleased with their experience.

The restaurant offers various grill fajitas, Tex-Mex favorites, and of course, frozen margaritas. Sounds like it will fit in great around these parts.

FMX has the opportunity to ask the general manager, Sean, what it was like to open the new restaurant.

"We were looking at multiple franchises to get into… The only one that really took us by storm was Fajita Pete’s. The quality of the food and the taste of the margaritas was a deal closer. We thought this would be the best venture for us as long as we stick with the quality that Fajita Pete’s as a franchise offers. I tell my cooks to act like they are cooking for their families because that’s what we do every day, cook for other people’s families. I will not send out products that I wouldn’t be proud to serve. Very family-oriented, focusing on catering and deliveries. Offering authentic, fresh Tex-Mex. We are located just off of Marsha Sharp and Milwaukee."

 

I'm looking forward to popping in there to grab a fajita salad. I've been staring that the menu and drooling for the past couple of days. That salad looks right up my alley.
