The Margarita Soft Serve Trend In Lubbock

Soft serve margaritas have become a viral trend after their invention earlier this year (probably in Ohio? huh?). Lubbock's Teddy Jack's and its sister restaurant Johnny Cadalliacs both offer this sweet, boozy treat. But why is this drink not everywhere if it's so popular?

Because getting the recipe right is super tricky. Alcohol has a much lower freezing point than other ingredients (which is why you can leave a bottle of vodka in the freezer indefinitely), so the balance with other ingredients to get it to not only freeze, but freeze creamy, involves some tinkering and mastery.

This means the soft serve margarita needs some type of creamy base, and perhaps even a thickener/ gel to get it to set up, like the commonly used food ingredient xanthan gum. I do not know Teddy Jack's recipe, but I do know they managed to pull it off.
