This isn't Wes' first rodeo, but I'm absolutely stoked and honored to flip pancakes for the people of Lubbock this Saturday, February 19th, 2022. We will be manning grill no. 1 from 7 to 8 a.m., and I can't wait to see you all there.

I used to go to the pancake festival every year with my grandfather when I was a little kid. It's a special memory that I'll have forever. Pancakes are also something that really seems to bring our community together. Who doesn't love some delicious pancakes?

Wes thinks he's going to be able to teach me a thing or two about pancakes this weekend. I must admit that although I was a line cook for over 10 years, I was never on a pancake station. I avoided it at all costs. I've always thought I was the worst pancake maker in the world. Mine always seem to come out weird-looking and I've avoided making them my entire life. Hopefully, Wes can show me some tricks. If not, we're all screwed.

It seems like I always flip them too soon, or maybe I'm just stupid. Or maybe both? Probably both.

Whatever the case, my grandpa would be incredibly proud if he were alive today to see me up there flipping pancakes for Lubbock to enjoy. I wish I could make a stack just for him. He'd love it. I'll be thinking about him on Saturday and I hope you guys enjoy my funny-looking pancakes. I'm going to try my very best. See you on Saturday!
