Texas vs. non-Texas chili: the key difference
There is a difference between Texas chili and non-Texas chili. This difference has led to a debate that has lasted through the ages.
The debate is over whether or not beans go in chili. If you're in Texas, you can't afford to get this question wrong.

Why Texans reject beans
This is all due to centuries' worth of traditions. The original recipe didn't call for beans. It's the way it's always been, and will always be.
The no-bean rule is such a big deal that chili competitions in the state of Texas actually have rules outlawing beans. Chili connoisseurs believe that beans distort the flavor and should be left out so that all of the flavor and spice can be experienced.
As we get further into fall and the nights turn cold, you may find yourself craving a bowl of chili to help you warm up. Just don't put beans in it if you're in Texas.
