I really thought Thai Pepper (3402 20th Street) was closed for good. This family-owned restaurant remained uncertain about the future after the tragic passing of Trakool "Kool" Srivarodom in early January from COVID-19 complications. They had what I thought was their goodbye meal when they served dozens and dozens of fans a free meal in honor of their late father and head cook.

Luckily for Lubbock, Thai Pepper is opening back up on Monday, May 10th, 2021. Thai Pepper explained their reopening procedures in a recent Facebook post:

First off, we just wanted to say thank you so much for your patience, generosity, and thoughts in this process. After some much needed time off, to think, and discuss our plans for the restaurant we have decided that we will be opening back up Monday, May 10th.
However, there are some changes that will be made operationally as our angel has transitioned to heaven.
There will be signs designating where to order and where to pick up.
We will be accepting phone orders (806-795-7444), you can call in as well as order inside the restaurant.
We will be allowing dine in, but only at about 50-60% capacity. This means about 8-9 tables will be open for seating. It is first come, first serve. We know many restaurants are 100%, but we cannot with a good conscience do this just yet.
Dine in procedures will be a bit different, you must order and pay BEFORE you sit at your table. Servers will bring food and drinks to you once it’s ready.
Please also remember, we have one less person making your delicious food. It will be difficult for our Thai Pepper family as we continue to work where Mr. Kool always was, but we’re ready to serve all of you in his memory.
Thank you,
Thai Pepper Management
I'm so happy that this iconic Lubbock eatery has decided to make a comeback. If you go, which I encourage you to do, please exercise patience as they navigate their reopening process. It's always been hard to get a table at Thai Pepper, and for good reason: the food is absolutely incredible.
