This is absolutely one of the best times of the year. Its Hatch Green Chile time and that leads to football, and to Halloween, then Thanksgiving, then Christmas. Yes, we actually mark time around here by when the freshly roasted green chiles are available.

I'm going to admit that I'm basic. I'm fine with canned green chiles and for most of the year that's all you can get. If you time it right in Texas though, you can actually have green chiles roasted right in front of you and put them up and use as needed.

My sources tell me the time for roasting begins next Saturday the 27th. Of course if you have skills, there are plenty of good looking chilis on the store shelves and in special display bins right now. I'm sure there's more technique to it, but I know people who just put them on a fork and roast them over the flame of a gas stove.

So, let's say you just crawled out from under a rock and are wondering, "What do I do with those?". My number one thing is to just put them on top of a burger with cheese. Next up, I really like them stirred into alfredo sauce over pasta and I like to use them to add a little zest to things like chicken spaghetti.

I picked up these pictures from a friend at the United Supermarket at 50th and Q in Lubbock. It looks like the big push is on even though we have to wait a week for the roasters. It's worth the wait to smell the results with each and every visit to the supermarket.
