The Nicolett Restaurant Set to Open in Downtown Lubbock Late Spring

Nicolett is a french female name meaning "people of victory." Past that, there are very few details about this new restaurant, which I find compelling and enticing.

The Nicolett is set to open in late spring at 511 Broadway, according to their currently bare-bones website and Lubbock in the Loop.

We do know that the restaurant will be home to Texas Tech alum Chef Finn Walter. According to his Linkedin page, Walter previously was an executive chef in Santa Fe at Elosia.

Based on these clues, I'm convinced The Nicolett will be a creative, high-end and lovely place to try something new. I've always been enamored with this beautiful location. I can't wait to see it thrive.
