Texas residents continue to face high egg prices, so how about some tasty tips on stretching them?
I hope you'll find a little something to your liking here. I'm sure a few are glaringly obvious to you, but you might find one or two that you're willing to try. There's also the side benefit that you might discover a new taste combination here. Of course, these are all ideas to stretch scrambled eggs, because stretching a regular egg is pretty much impossible.
1. Migas
There are any number of variations of ways to make migas, but the core of the dish is putting shredded corn tortillas in with your eggs. Also, leftover corn chips also do the job and it's a great way to get ride of those tiny chips that are too small to dip anyways. For more authentic migas, add onion, peppers, and a sprinkle of cheese on top.
2. Potatoes
Yes, the lowly potato will stretch eggs like nobodies business. I baked an extra one just this past week to mix in with my eggs. Sometimes I use fresh potatoes and fry them up crispy. Leftover hash browns and even fries also work pretty well.
3. Milk
Who hasn't added milk or cream to scrambled eggs? Allrecipies.com puts the amount at about a tablespoon per egg. Adding milk to eggs also makes them creamier in texture.
4. Lemon Juice
I once went to an omelet bar at a very ritzy hotel. The cook was ladling scrambled eggs from a bowl and they were so perfectly blended I asked him how he did that. His answer was simple, "lemon juice". Yes, you can only add a tiny bit per egg, but it all helps.
5. Spice Vegetables
None of us want to wake up blurry-eyed and start chopping ingredients for eggs. Do what I do, my local grocery stores have two items that are an enormous help. One is a pepper and onion blend (or you could just get peppers frozen), the other is called "Seasoning Blend" and it contains onions, celery, peppers, and parsley flakes.
6. Wrap It Up
Turn your one egg into a whole "thing" by making a breakfast burrito. That volume that tortilla adds to your egg is pretty substantial. You can, of course, fill it or top it off with any number of things.
7. Mushrooms
For some reason mushrooms tend to be forgotten at breakfast time. I don't know why we do this, because a lot of restaurants offer mushroom omelets because they are a frequently requested item. You can also grab up a bag that are frozen, so you always have some ready to go.

It looks like eggs may stay expensive until the end of the year when egg-laying chickens finally start producing. Oh, and you might want to decide to switch to all-plastic eggs for Easter right now.
